Add Sub-Category on rows and SUM(Sales) on columns
Create a line chart within a worksheet named Sales Trend:
Add Order Date (as month and continuous) on columns and SUM(Sales) on rows
On a dashboard add a vertical container and place both worksheets within it

Add a filter action so that when you click a Sub-Category you can see only its bar:
Dashboard actions → Source Sheets: Sales by Sub-Category (Dashboard) → Run Action on: Select → Target Sheets: Sales by Sub-Category (Sheet) → Clearing the selection will: Show all values → Target Filters: Selected Filters → Sub-Category
